Research Background Whey is byproduct of cheese or casein. The gross solids of whey accounts for half of the gross dry matters of raw milk and the main components are lactose, whey protein and minerals. Whey protein makes up 20% of the total milk protein and both Vitamins and minerals exist in cow milk. Whey has high nutritious value. After further processing, both the nutritious value and health-care functions of whey powder, lactose, concentrated whey protein, isolated whey protein and milk protein peptide are greatly improved. As primary milk-based raw material, whey products are extensively used in piglet feed, dairy products, bakery food, health-care food, soft drinks and pharmaceuticals. There is no scaled commercial cheese production in China and whey products should be imported, whereas the EU, Oceania and North America are the main suppliers of whey products to China. China is the largest producer of pigs and consumes the most pork in the world; also, China has the largest population. The demand for whey especially high value added whey products is growing constantly thanks to the rapid development of China’s economy and higher requirement for food nutrition and health care by people. There has been a substantial growth in the recent decade. The import of whey and disnatured whey products stood at 288,000 tons in 2009, dehydrated lactose, 50,700 tons and whey protein, 12,400 tons, whereas the import of whey and disnatured whey products recorded 137,900 tons in 2002 and whey protein, 205 tons. The import of dehydrated lactose was 12,100 tons in 2004. According to BOABC, the application of whey products in multiple processing industries is still at a growing stage, the development potential is huge. In addition, China is at the starting stage of cheese production and integrated utilization of whey, China shall have its own cheese and whey processing industry in the foreseeable future. Import shall still account for the largest proportion in the total domestic demand for whey products, whereas domestic made whey products shall supplement the demand. This research report focuses on the current market status and foreseeable future trend of sweet whey powder, desalted whey powder and concentrated whey protein, but the overall content is not limited to these three varieties. Apart from using foreign and domestic official data, more importantly, the researchers of this report use data from field surveys. This report combines desk study with field surveys.
